On a day to day basis the kitchen is looked after by our head chef Stuart Black (above). Born in Aberfeldy, Stuart after working in other Perthshire restaurants, first joined the Parklands in 2012, before departing on a learning journey in 2014 that eventually to him to work at the Elderflower restuarant in Lymington, where alongside Andrew du Bourg the chef/proprietor they gained 3 Rosettes. Stuart has returned to Scotland and taken up the role of Head Chef at the Parklands since April 2018. Stuart has embarked on the challenge of moving dining at Parklands to a new level with his own culinary style at the forefront.
Graeme Pallister is our Executive Chef.
Graeme trained at Kinloch House Hotel in the mid 90s and has since worked at Longueville Manor Jersey, The Angel in Sussex, at Restaurant Andrew Fairlie Gleneagles, and Perth's Lets Eat where he was head chef for 2 years.
Although still involved in the Parklands Hotel, Graeme's main focus is his award winning restaurant, close to the hotel. 63 Tay Street as his signature restaurant using the guidelines of LOCAL - HONEST - SIMPLE. Graeme was crowned Scottish Chef of the Year at the Catering in Scotland Awards 2013 and is a Masterchef of Great Britain
